Kitchen floors take grease, food, water and constant traffic. Grease works into grout lines and tile pores, and once that happens a daily mop won't touch it. It turns into a slip problem and an odor problem.

I work after your last cover and get out before prep starts. Kitchens need floors dry and safe by morning, so I plan products and dry times around that.
Patio dining
Lots of Vegas restaurants have patios with concrete or stone. Food, drink spills and sun wear them out. Concrete sealing and stone sealing help them clean up easier.
Slip resistance
I won't put a high-gloss finish where it creates a hazard. In kitchens and wet areas, clean and grippy matters more than shiny.
Health inspections
I don't claim to know your inspector's checklist better than you do. But clean grout and floors that don't hold grease make the daily close easier, and that's what the inspector sees.
